‘Everything started to dry up a few years ago,’ says farmer Carmen Ruiz, prodding the crumbling, cracked earth where Lake Constitucion used to be. Occupying an area of over 2,000 acres in the state of Queretaro, the lake was once larger than Gibraltar.
